  • 4 cups Shredded Zucchini Salt and drain well
  • 1 teaspoon Salt Essential for draining moisture
  • 2 large Eggs Beaten
  • 1/2 cup Grated Parmesan Cheese
  • 1 cup Shredded Mozzarella Cheese Split between the crust and topping
For the Filling
  • 1 pound Ground Beef Season well
  • 1 medium Chopped Onion
  • 1 cup Pizza Sauce
  • 1 cup Chopped Green Bell Pepper
  • 1 cup Sliced Mushrooms
  • 1 teaspoon Dried Oregano
  • 1 teaspoon Garlic Powder
  • 1/2 teaspoon Cracked Black Pepper

Method
 

Step-by-Step Instructions
  1. Preheat your oven to 400°F (200°C).
  2. Combine shredded zucchini with a pinch of salt in a medium bowl and let it sit for about 10 minutes.
  3. Squeeze out excess liquid from the zucchini using a clean towel or cheesecloth.
  4. Mix drained zucchini with beaten eggs, grated Parmesan cheese, and half of the shredded mozzarella in a large bowl.
  5. Grease a 9x13-inch baking dish and press the zucchini mixture into the bottom.
  6. Bake the crust for 20 minutes until set and lightly browned.
  7. In a skillet, brown the ground beef with the chopped onion for 5-7 minutes.
  8. Stir in the pizza sauce, green bell pepper, mushrooms, oregano, garlic powder, and black pepper. Simmer for 5 minutes.
  9. Spread the beef mixture over the pre-baked zucchini crust.
  10. Top with the remaining mozzarella and all of the cheddar cheese.
  11. Bake for another 20 minutes until the cheese is melted, bubbly, and lightly golden.
  12. Allow the casserole to cool for a few minutes before slicing.
