Step-by-Step Instructions

  4. Mix drained zucchini with eggs, Parmesan, and half of the mozzarella.
  5. Grease a baking dish and press the zucchini mixture evenly to form the crust.
  6. Bake the crust for 20 minutes until lightly golden.
  7. Cook ground beef and chopped onion in a skillet until browned, about 7-10 minutes.
  8. Add pizza sauce, bell pepper, mushrooms, oregano, garlic powder, and pepper; simmer for 5 minutes.
  9. Spread meat mixture over the baked crust evenly.
  10. Sprinkle the remaining mozzarella and cheddar cheese on top.
  11. Bake the assembled casserole for another 20 minutes until cheese is bubbly and golden.
