  • 1 cup Carrots Julienne or grated for fine texture.
  • 1 small Red Onion Diced small.
  • 1 cup Red Cabbage Thinly sliced.
  • 1/4 cup Cilantro Optional.
  • 2 stalks Green Onions Diced.
  • 1/2 cup Peanuts Crushed or whole.

Method
 

Preparation Instructions
  1. In a small jar, combine peanut butter, sweet chili sauce, soy sauce, lime juice, and water. Whisk until smooth.
  2. Cook noodles according to package instructions, drain, and rinse under cold water. Let cool.
  3. Chop vegetables: slice bell pepper, julienne carrots, dice onion, and finely slice cabbage and green onions.
  4. In a large bowl, combine cooled noodles, chopped vegetables, and edamame. Drizzle with dressing and toss gently.
  5. Serve fresh or store in the fridge for up to 4 days.
