  • 1/2 cup Finely Diced Red Onion Consider green onions for a milder flavor.
  • 1/4 cup Chopped Cilantro Parsley can be a substitute if not a cilantro fan.

Step-by-Step Instructions
  1. Cook the Chicken: Place the chicken breasts in a medium pot, season with salt and pepper, cover with water, boil then simmer for 15-20 minutes until cooked.
  2. Shred the Chicken: Remove the chicken, let cool, then shred into bite-sized pieces using forks or a stand mixer.
  3. Prepare the Dressing: In a large bowl, combine Greek yogurt, lime juice, cumin, chili powder, and paprika. Whisk until smooth.
  4. Combine Ingredients: Add the shredded chicken, black beans, red bell pepper, corn, red onion, and cilantro to the bowl. Stir until well mixed.
  5. Chill: Cover and refrigerate for at least 30 minutes to meld flavors.
  6. Serve: Gently stir before serving. Great with toast, tortilla chips, or wrapped in a tortilla.
