  • 1 lb Ground Beef or ground turkey for a lighter option
  • 1 medium Onion finely chopped
  • 1 packet Taco Seasoning pre-packaged blend
  • 1/4 cup Water adjust based on desired sauciness
  • 1 can Black Beans or kidney/pinto beans
  • 1 can Diced Tomatoes with Green Chiles or plain diced tomatoes
  • 1 cup Sour Cream or Greek yogurt
For the Crunchy Layer
  • 1 bag Fritos Corn Chips or Doritos for a softer texture
For the Cheesy Top
  • 2 cups Mexican-Style Shredded Cheese or Monterey Jack/sharp cheddar
For Toppings
  • 1/4 cup Green Onions chopped
  • 1 cup Guacamole
  • 1 cup Salsa variety of your choice
  • 1/4 cup Jalapenos fresh or pickled

Method
 

Step-by-Step Instructions
  1. Preheat your oven to 350°F (175°C) and prepare a 13x9 inch baking dish with nonstick spray.
  2. In a large skillet over medium heat, brown the ground beef for about 5-7 minutes, then add chopped onion and cook for another 3-5 minutes until tender.
  3. Stir in the taco seasoning with ¼ cup water and bring to a gentle boil, then add black beans, diced tomatoes with green chiles, and sour cream. Cook until warmed through, about 3-4 minutes.
  4. Layer the Fritos Corn Chips evenly at the bottom of the prepared baking dish. Sprinkle 1 cup of shredded cheese over the Fritos, followed by half of the beef mixture.
  5. Repeat the layering with another layer of Fritos, the remaining beef mixture, and the remaining cup of shredded cheese.
  6. Cover with aluminum foil and bake for 15 minutes, then remove the foil and bake for another 5 minutes until cheese is bubbly and golden.
  7. Let sit for a few minutes before serving and top with additional Fritos and toppings of your choice.
