  • 1 cup Cooked Sweet Potatoes (pureed) make sure smooth
  • 2 large Eggs room temperature preferred
  • 1 large Egg Yolk optional
  • 1/2 cup Vegetable Oil can substitute with melted coconut oil
  • 1/4 cup Butter (melted) use vegan butter for dairy-free
  • 1 tsp Vanilla Extract optional
  • 1 cup Buttermilk can swap with milk & vinegar
  • 1/4 cup Honey for glaze sweetness
For the Glaze
  • 1/4 cup Melted Butter
  • 1/2 cup Brown Sugar adjust to taste
  • 2 tbsp Honey personalize amount
  • 1/4 tsp Salt to balance sweetness
  • 1/2 tsp Cinnamon

Step-by-Step Instructions
  1. Prepare Sweet Potato Puree: Boil sweet potatoes until fork-tender, about 30 minutes. Cool slightly and puree until smooth.
  2. Preheat Oven: Preheat oven to 400°F (200°C) and butter an 8-inch glass baking dish.
  3. Mix Dry Ingredients: Whisk together cornmeal, flour, baking powder, salt, baking soda, cinnamon, clove, nutmeg, granulated sugar, and brown sugar.
  4. Combine Wet Ingredients: In a bowl, mix sweet potato puree, eggs, egg yolk, melted butter, vegetable oil, vanilla extract, and buttermilk until creamy.
  5. Combine Mixtures: Fold dry mixture into wet mixture until just combined, being careful not to overmix.
  6. Bake: Pour batter into prepared dish, bake for 20 minutes, then tent with foil and bake for another 20 minutes.
  7. Prepare Glaze: Mix melted butter, brown sugar, honey, salt, and cinnamon until smooth.
  8. Serve: Cool slightly and brush with glaze; cut into squares and serve warm.
