Step-by-Step Instructions
  1. Preheat your oven to 375°F (190°C) and grease a 9x9 inch baking dish.
  2. In a large mixing bowl, combine ground beef, plain breadcrumbs, milk, egg, ketchup, garlic powder, onion powder, salt, and pepper. Mix gently until just combined.
  3. Transfer the meat mixture into the prepared baking dish, spread evenly and press down to form a compact layer. Bake uncovered for 20-25 minutes until edges are brown.
  4. While the meatloaf bakes, prepare the mashed potatoes. Warm leftover mashed potatoes, mix in sour cream and butter, and season to taste.
  5. Spread the prepared mashed potatoes over the cooked meatloaf layer, covering it completely.
  6. Sprinkle shredded cheddar cheese evenly over the mashed potatoes. Bake for an additional 10-15 minutes until cheese is melted and bubbly.
  7. Allow the casserole to rest for 5-10 minutes, then garnish with freshly chopped parsley, slice, and serve warm.
