- Cook 1 cup of white rice according to package instructions. Rinse until water runs clear. Fluff with a fork and stir in lime juice. Set aside.
- In a skillet, heat over medium-high and add 1 lb of ground beef. Cook for 5-7 minutes until browned, breaking it apart. Drain excess fat.
- Reduce heat to medium, return beef to skillet, and add taco seasoning and 1/2 cup of water. Simmer for 3-5 minutes until thickened.
- Rinse 1 can of black beans and drain 1 cup of corn. Optionally warm in the microwave. Chop fresh cilantro.
- Assemble bowls by layering hot rice, seasoned beef, black beans, and corn. Top with cheddar cheese.
- Finish with salsa or pico de gallo and cilantro. Serve with lime wedges on the side.
