  • 1 lb Ground Beef Taco seasoned
For the Mix-ins
  • 1 can Black Beans Rinsed and drained
  • 1 cup Corn Canned or thawed frozen
For the Toppings
  • 1 cup Cheddar Cheese Shredded
  • 1 cup Salsa or Pico de Gallo To taste
  • 1 bunch Fresh Cilantro Chopped, optional

Method
 

Step-by-Step Instructions
  1. Cook 1 cup of white rice according to package instructions. Rinse until water runs clear. Fluff with a fork and stir in lime juice. Set aside.
  2. In a skillet, heat over medium-high and add 1 lb of ground beef. Cook for 5-7 minutes until browned, breaking it apart. Drain excess fat.
  3. Reduce heat to medium, return beef to skillet, and add taco seasoning and 1/2 cup of water. Simmer for 3-5 minutes until thickened.
  4. Rinse 1 can of black beans and drain 1 cup of corn. Optionally warm in the microwave. Chop fresh cilantro.
  5. Assemble bowls by layering hot rice, seasoned beef, black beans, and corn. Top with cheddar cheese.
  6. Finish with salsa or pico de gallo and cilantro. Serve with lime wedges on the side.
