For the Buddha Bowl
  • 4 medium Sweet Potatoes firm, diced
  • 2 tablespoons Olive Oil for roasting
  • to taste Salt
  • to taste Pepper
  • 2 cups Broccoli Florets
  • 2 cups Shredded Cabbage any variety
  • 1 cup Grated Carrots
  • 1 medium Avocado sliced
For the Peanut Sauce
  • 1/2 cup Peanut Butter or almond butter
  • 3 tablespoons Soy Sauce or tamari
  • 2 tablespoons Maple Syrup or agave syrup
  • 2 tablespoons Lime Juice or lemon juice
  • 1 tablespoon Sesame Oil optional
For Serving
  • 1/4 cup Cilantro fresh, for garnish
  • 1/4 cup Chopped Peanuts or sunflower seeds

Method
 

Preparation Steps
  1. Preheat your oven to 400°F (200°C). Prepare a baking sheet lined with parchment paper.
  2. Dice the sweet potatoes into even chunks. Toss with olive oil, salt, and pepper. Spread evenly on the baking sheet and roast for 25-30 minutes, flipping halfway.
  3. While roasting, combine broccoli florets, shredded cabbage, grated carrots, and sliced avocado in a mixing bowl.
  4. In a separate bowl, whisk together peanut butter, soy sauce, maple syrup, lime juice, and sesame oil until smooth.
  5. Once the sweet potatoes are done, cool slightly. In serving bowls, layer mixed veggies, then top with roasted sweet potatoes. Drizzle with peanut sauce.
  6. Garnish with cilantro and chopped peanuts. Serve immediately.
