  • 500 g small waxy potatoes new potatoes or Yukon Gold
  • 200 g bacon can substitute with turkey bacon
For the Dressing
  • 2 tbsp extra virgin olive oil
  • 150 g sour cream can use Greek yogurt
  • 1 tbsp Dijon mustard yellow mustard can substitute
  • 1 pinch red chili flakes adjust to taste
  • 1 lemon use both zest and juice
For the Freshness
  • 2 tbsp fresh basil can substitute with chives or parsley
  • 1 tbsp green onions
  • 1 pinch sea salt
  • 1 pinch black pepper

Method
 

Step-by-Step Instructions
  1. Scrub the potatoes under cold water, place in salted water, and boil for about 10-12 minutes until just tender.
  2. Chop the bacon into small pieces. In a frying pan, heat olive oil and cook the bacon until crispy, about 5-7 minutes.
  3. Finely chop the basil and green onions, and set aside in a bowl.
  4. Drain the potatoes and let them cool for a couple of minutes. Cut them into bite-sized pieces.
  5. Transfer the warm potatoes to a bowl. Zest and juice the lemon over the potatoes, then add salt and pepper.
  6. Mix sour cream, Dijon mustard, and chili flakes in a separate bowl until smooth.
  7. Pour the dressing over the potatoes, add crispy bacon and herbs, and gently toss until coated.
  8. Serve warm or at room temperature. Allow to sit for about 10 minutes before serving.
