Ingredients
  

For the Marinade
  • 3 tablespoons Hoisin Sauce
  • 2 tablespoons Soy Sauce
  • 2 tablespoons Oyster Sauce
  • 1 tablespoon Shaoxing Wine Substitute with dry sherry if needed
  • 1 tablespoon Honey Maltose works as a substitute
  • 1 tablespoon Brown Sugar
  • 1 tablespoon Ketchup
  • 1 teaspoon Five-Spice Powder
  • 1 teaspoon Sesame Oil
  • 2 cloves Garlic Minced
  • 1 teaspoon Ginger Grated
  • 0.5 teaspoon Red Food Coloring Optional
For the Chicken
  • 2 pounds Chicken Thighs or breasts, thighs preferred for juiciness

Method
 

Preparation
  1. In a medium bowl, whisk together all marinade ingredients until smooth.
  2. Place chicken in a ziplock bag and pour the marinade over it. Seal and massage to coat evenly.
  3. Refrigerate for at least 4 hours or overnight.
Cooking
  1. Preheat oven to 400°F (200°C), line a baking sheet with foil and place a wire rack on top.
  2. Remove chicken from marinade and place it on the rack. Roast for 25-30 minutes, flipping halfway through.
  3. Baste with honey and warm water mix for extra sweetness in the last 5 minutes.
  4. For grilling, preheat grill to medium heat and grill chicken for 5-7 minutes on each side, basting with honey glaze.
Serving
  1. Let cooked chicken rest for a few minutes, slice, and serve with jasmine rice or stir-fried veggies.

Notes
