Preparation
- In a medium bowl, whisk together all marinade ingredients until smooth.
- Place chicken in a ziplock bag and pour the marinade over it. Seal and massage to coat evenly.
- Refrigerate for at least 4 hours or overnight.
Cooking
- Preheat oven to 400°F (200°C), line a baking sheet with foil and place a wire rack on top.
- Remove chicken from marinade and place it on the rack. Roast for 25-30 minutes, flipping halfway through.
- Baste with honey and warm water mix for extra sweetness in the last 5 minutes.
- For grilling, preheat grill to medium heat and grill chicken for 5-7 minutes on each side, basting with honey glaze.
Serving
- Let cooked chicken rest for a few minutes, slice, and serve with jasmine rice or stir-fried veggies.
