Cooking Steps
  1. Rinse the large shrimp under cold water and pat them dry. Season with salt and pepper.
  2. Heat about 2 tablespoons of olive oil in a large skillet over medium-high heat for about 2 minutes.
  3. Add minced garlic and grated ginger to the skillet and sauté for 1 minute until fragrant.
  4. Add the seasoned shrimp to the skillet and cook for 2-3 minutes until they turn pink and opaque.
  5. Incorporate diced fresh pineapple into the skillet and cook for an additional 1-2 minutes.
  6. Pour in the sweet chili sauce and soy sauce, stirring to coat evenly and simmer for 2-3 minutes.
  7. Remove from heat and stir in sliced green onions for added flavor and crunch.
  8. Taste and adjust seasoning if needed, then serve hot over jasmine rice or in tacos.
