Equipment

  • medium saucepan
  • 9-inch pie pan
  • floured surface
  • Wire rack

Method

Step-by-Step Instructions
  1. Wash 2 cups of fresh strawberries, remove stems, and cut them into small pieces. In a medium saucepan, add strawberries with 1/4 cup of water and 1/4 cup of sugar. Cook over medium heat for about 5 minutes, stirring gently.
  2. If using homemade pie crust, roll it out on a floured surface to about 1/8 inch thick. Fit it into a 9-inch pie pan. Preheat the oven to 400°F (200°C).
  3. Remove strawberries from heat and let cool slightly. Pour mixture into prepared crust, spreading evenly and leaving space for the crust to expand.
  4. Bake pie for 25-30 minutes, keeping an eye on the crust; it's ready when golden brown and filling is bubbling.
  5. Remove pie from oven and let it cool on a wire rack for at least 1 hour. Prepare royal icing for frosting.
  6. Frost the top of the pie with icing and sprinkle colorful decorations. Slice and serve on its own or with vanilla ice cream.
