Step-by-Step Instructions
  1. Wash and dry two firm English cucumbers, slice them thinly, and place in a large mixing bowl. Slice a sweet onion the same way and add it to the cucumbers. Sprinkle salt over the cucumbers and let sweat for 10 minutes.
  2. Soften 4 ounces of whipped cream cheese in the microwave. In a medium bowl, mix the softened cream cheese with 1/4 cup mayonnaise, 2 tablespoons soy sauce, 1 tablespoon rice vinegar, and 1 teaspoon sesame oil until smooth.
  3. Rinse the soaked cucumbers under cold water and pat dry. Combine the drained cucumbers and sweet onion in a large bowl, add half of the dressing, and toss together.
  4. Add the remaining dressing and desired optional mix-ins, gently toss to coat everything evenly.
  5. Transfer the mixture to a serving dish, garnish with sesame seeds or chopped green onions, and serve immediately.
