  • 1/2 cup Dry White Wine Adds depth to the sauce; vegetable broth for non-alcoholic option.
  • 2 tablespoons Olive Oil Use extra virgin for enhanced flavor.

Cooking Instructions
  1. Begin by prepping your ingredients: mince garlic, halve cherry tomatoes, and chiffonade basil.
  2. Heat olive oil in a skillet over medium-high heat. Season cod fillets with salt and pepper, then sear in the hot skillet for 3-4 minutes on one side.
  3. Flip the cod and cook for another 3-4 minutes until it's cooked through and flakes easily. Remove and set aside.
  4. In the same skillet, reduce heat to medium and sauté minced garlic for about 30 seconds.
  5. Add halved cherry tomatoes and cook until they begin to burst, around 2-3 minutes.
  6. Pour in dry white wine, simmer for 3-4 minutes to reduce slightly.
  7. Return the seared cod to the skillet, sprinkle with basil, and let everything simmer together for another 2-3 minutes.
  8. Transfer to a serving platter, spoon sauce over the cod, and garnish with extra basil leaves.
