- Begin by prepping your ingredients: mince garlic, halve cherry tomatoes, and chiffonade basil.
- Heat olive oil in a skillet over medium-high heat. Season cod fillets with salt and pepper, then sear in the hot skillet for 3-4 minutes on one side.
- Flip the cod and cook for another 3-4 minutes until it's cooked through and flakes easily. Remove and set aside.
- In the same skillet, reduce heat to medium and sauté minced garlic for about 30 seconds.
- Add halved cherry tomatoes and cook until they begin to burst, around 2-3 minutes.
- Pour in dry white wine, simmer for 3-4 minutes to reduce slightly.
- Return the seared cod to the skillet, sprinkle with basil, and let everything simmer together for another 2-3 minutes.
- Transfer to a serving platter, spoon sauce over the cod, and garnish with extra basil leaves.
