Method
 

Step-by-Step Instructions
  1. Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. Carefully slice each salmon fillet lengthwise to create a pocket for the filling.
  3. Brush the salmon fillets with olive oil and season with salt and pepper.
  4. In a skillet, heat a tablespoon of olive oil and sauté baby spinach with Italian seasoning, paprika, and cayenne for about 2-3 minutes.
  5. Remove the skillet from heat and stir in roasted red peppers, feta cheese, and parmesan cheese.
  6. Spoon the filling into the prepared pockets of the salmon fillets.
  7. Place the stuffed salmon on the prepared baking sheet and bake for 12-17 minutes until cooked through.
  8. Remove from the oven and let rest for a couple of minutes before serving.
