- Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
- Carefully slice each salmon fillet lengthwise to create a pocket for the filling.
- Brush the salmon fillets with olive oil and season with salt and pepper.
- In a skillet, heat a tablespoon of olive oil and sauté baby spinach with Italian seasoning, paprika, and cayenne for about 2-3 minutes.
- Remove the skillet from heat and stir in roasted red peppers, feta cheese, and parmesan cheese.
- Spoon the filling into the prepared pockets of the salmon fillets.
- Place the stuffed salmon on the prepared baking sheet and bake for 12-17 minutes until cooked through.
- Remove from the oven and let rest for a couple of minutes before serving.
