- Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
- Sauté the finely chopped onions and minced garlic in a skillet over medium heat for about 5 minutes.
- In a large mixing bowl, combine all meatloaf ingredients and stir gently until just combined.
- Transfer the meat mixture onto the parchment paper and gently flatten it into a rectangle about 1 inch thick.
- Layer shredded mozzarella cheese over the flattened meat mixture, leaving about an inch from the edges.
- Gently roll the meatloaf using the parchment paper as a guide, sealing the edges well.
- Place the rolled meatloaf seam-side down onto the baking sheet and pour marinara sauce over the top.
- Bake for about 60 minutes, aiming for an internal temperature of 160°F (70°C).
