  • 2 cups grilled or roasted chicken diced
For the Base
  • 1 cup sweet corn canned, well-drained
  • 1 cup cucumber diced, preferably English
  • 1/4 cup red onion finely chopped
For the Dressing
  • 1/2 cup mayonnaise or Greek yogurt for a lighter version
  • 1/4 cup Greek yogurt optional
  • 2 tablespoons lime juice freshly squeezed
  • 1/4 cup cilantro chopped
For Seasoning
  • 1 teaspoon smoked paprika or regular paprika
  • to taste salt
  • to taste black pepper

  • 1/2 cup crumbled feta cheese optional

Method
 

Preparation
  1. Dice the grilled or roasted chicken into bite-sized pieces.
  2. Wash and chop the cucumber into small chunks and finely chop the red onion.
  3. In a large mixing bowl, add the diced chicken, sweet corn, cucumber, red onion, mayonnaise, Greek yogurt, lime juice, cilantro, smoked paprika, salt, and black pepper. Mix thoroughly.
  4. Adjust the creaminess by folding in additional mayonnaise or Greek yogurt to taste.
  5. Cover and refrigerate for at least 30 minutes to allow flavors to meld.
  6. Serve chilled, garnishing with crumbled feta cheese if using.
