Preparation
- Dice the grilled or roasted chicken into bite-sized pieces.
- Wash and chop the cucumber into small chunks and finely chop the red onion.
- In a large mixing bowl, add the diced chicken, sweet corn, cucumber, red onion, mayonnaise, Greek yogurt, lime juice, cilantro, smoked paprika, salt, and black pepper. Mix thoroughly.
- Adjust the creaminess by folding in additional mayonnaise or Greek yogurt to taste.
- Cover and refrigerate for at least 30 minutes to allow flavors to meld.
- Serve chilled, garnishing with crumbled feta cheese if using.
