Cooking Instructions
- Bring a large pot of salted water to a boil. Add penne pasta and cook until al dente, about 9–11 minutes. Drain pasta and reserve a cup of starchy pasta water.
- In a large skillet, melt butter over medium heat and add sliced smoked sausage. Sauté until golden brown, about 5–7 minutes.
- Add minced garlic to the skillet and sauté for 1-2 minutes until fragrant. Stir in smoked paprika and red pepper flakes.
- Pour chicken broth into the skillet to deglaze, stirring well. Simmer for 3-4 minutes to develop flavor.
- Lower heat and gradually stir in heavy cream. Add grated Parmesan cheese until melted and sauce is creamy.
- Add cooked penne pasta to the skillet, tossing to coat. Adjust thickness with reserved pasta water as needed. Season with salt and pepper.
- Garnish with chopped parsley and serve immediately in bowls.
