  • 4 ounces Cream Cheese Vegan cream cheese can be substituted.
  • 1 cup Cheddar Cheese Shredded.
  • 1 cup Monterey Jack Cheese Shredded.
For Garnish
  • 1/4 cup Cilantro Chopped.
  • 1/2 cup Sour Cream Greek yogurt can be used.
  • 1 cup Diced Tomatoes Can substitute with avocado.

Method
 

Step-by-Step Instructions
  1. In a medium saucepan, combine beef broth, butter, salt, garlic powder, and paprika. Bring to a boil, stir in rice, reduce heat to low, cover, and let simmer for 15-18 minutes until rice is tender. Fluff with a fork.
  2. Season steak strips with salt, pepper, garlic powder, paprika, and cumin. Heat olive oil in a large skillet, add steak strips and sear for 3-4 minutes on each side. Remove from heat and let rest for 5 minutes.
  3. In a saucepan over low heat, pour in heavy cream and stir in cream cheese until melted. Gradually add cheddar and Monterey Jack cheese, mixing well. Stir in garlic powder and cayenne pepper if desired.
  4. Assemble by scooping rice into bowls, layering sliced steak strips, and drizzling queso sauce over the top.
  5. Garnish with cilantro, diced tomatoes, and jalapeño slices. Serve with a dollop of sour cream.
