For the Filling
  • 2 cups Fresh Spinach Avoid wilted or frozen spinach.
  • ½ cup Feta Cheese Can mix with mozzarella or goat cheese.
  • ¼ cup Cream Cheese Can substitute with vegan cream cheese.
  • 1 medium Onion Finely chopped.
  • 2 cloves Garlic Minced.

  • 1 large Egg For egg wash, use vegan substitute if needed.

  • 1 tablespoon Olive Oil Can substitute with avocado oil.

Method
 

Step-by-Step Instructions
  1. Preheat your oven to 375°F (190°C) and prepare a baking sheet lined with parchment paper.
  2. In a medium skillet, heat 1 tablespoon of olive oil over medium heat. Add 1 chopped onion and 2 minced garlic cloves, cooking until soft, about 3-4 minutes. Add 2 cups of fresh spinach and cook until wilted for 2-3 minutes.
  3. Transfer the sautéed mixture to a mixing bowl and add ½ cup of crumbled feta cheese, ¼ cup of cream cheese, and a pinch of salt and pepper. Mix until combined.
  4. On a floured surface, roll out thawed puff pastry to about 1/8 inch thick. Cut into 3x3 inch squares.
  5. Spoon 1 tablespoon of creamy filling into the center of each pastry square and fold over to seal.
  6. Seal the edges firmly and crimp with a fork if desired.
  7. Beat 1 egg and brush over the tops of each sealed mini roll.
  8. Place rolls on the prepared baking sheet and bake for 20-25 minutes until golden brown.
  9. Allow to cool on the baking sheet for about 10 minutes before serving warm.
