- Preheat your oven to 375°F (190°C) and prepare a baking sheet lined with parchment paper.
- In a medium skillet, heat 1 tablespoon of olive oil over medium heat. Add 1 chopped onion and 2 minced garlic cloves, cooking until soft, about 3-4 minutes. Add 2 cups of fresh spinach and cook until wilted for 2-3 minutes.
- Transfer the sautéed mixture to a mixing bowl and add ½ cup of crumbled feta cheese, ¼ cup of cream cheese, and a pinch of salt and pepper. Mix until combined.
- On a floured surface, roll out thawed puff pastry to about 1/8 inch thick. Cut into 3x3 inch squares.
- Spoon 1 tablespoon of creamy filling into the center of each pastry square and fold over to seal.
- Seal the edges firmly and crimp with a fork if desired.
- Beat 1 egg and brush over the tops of each sealed mini roll.
- Place rolls on the prepared baking sheet and bake for 20-25 minutes until golden brown.
- Allow to cool on the baking sheet for about 10 minutes before serving warm.
