Preparation Steps
- Preheat your oven to 375°F (190°C) and prepare a baking sheet with non-stick cooking spray.
- In a large mixing bowl, combine all-purpose flour, cornmeal, brown sugar, baking powder, and salt. Add the buttermilk, softened butter, and egg, stirring until just combined. Fold in diced jalapeno peppers.
- Drop small mounds of the cornbread batter onto the prepared baking sheet. Bake for 12-15 minutes until lightly golden and a toothpick comes out clean. Let them cool for 3-5 minutes on the pan.
- In a medium bowl, blend goat cheese and cream cheese with whole milk until smooth. Stir in chopped bacon and fresh chives.
- Once cornbread is cooled, spread about 1 tablespoon of filling onto the flat side of half the cornbread rounds. Top with the other half to create sandwiches.
