Method
 

Preparation Steps
  1. Preheat your oven to 375°F (190°C) and prepare a baking sheet with non-stick cooking spray.
  2. In a large mixing bowl, combine all-purpose flour, cornmeal, brown sugar, baking powder, and salt. Add the buttermilk, softened butter, and egg, stirring until just combined. Fold in diced jalapeno peppers.
  3. Drop small mounds of the cornbread batter onto the prepared baking sheet. Bake for 12-15 minutes until lightly golden and a toothpick comes out clean. Let them cool for 3-5 minutes on the pan.
  4. In a medium bowl, blend goat cheese and cream cheese with whole milk until smooth. Stir in chopped bacon and fresh chives.
  5. Once cornbread is cooled, spread about 1 tablespoon of filling onto the flat side of half the cornbread rounds. Top with the other half to create sandwiches.
