  • 2 cups Corn Use fresh summer corn or thawed frozen corn
  • 1 piece Jalapeño Adjust according to your heat preference
  • 1/4 cup Cilantro Optional, leave out if not a fan
  • 2 pieces Green Onions Sliced for crunch
For the Dressing
  • 1/2 cup Mayonnaise Can substitute with Greek yogurt or vegan mayo
  • 2 tablespoons Lime Juice Freshly squeezed for best flavor
  • 1 tablespoon Sugar Can reduce or omit for less sweet slaw
  • 1 teaspoon Garlic Powder Fresh minced garlic is also a delicious choice

  • to taste Pepper Essential seasoning

Method
 

Preparation Steps
  1. In a large mixing bowl, toss together the cole slaw mix, corn, minced jalapeño, chopped cilantro, and sliced green onions.
  2. In a separate small bowl, whisk together mayonnaise, fresh lime juice, sugar, garlic powder, salt, and pepper until smooth.
  3. Drizzle the dressing over the slaw mixture and gently fold everything together.
  4. Cover the slaw with plastic wrap or transfer to an airtight container and refrigerate for at least 30 minutes.
