  • 1 medium Zucchini Remove seeds if large and grate.
  • 2 cups Carrots Grated.
  • 3 Eggs
  • 1 cup Brown Sugar Clumping is normal.
  • 1/2 cup Honey Can substitute with maple syrup.
  • 1/2 cup Vegetable Oil Can replace with melted coconut oil.
  • 1/2 cup Walnuts Optional, can substitute with pecans.
  • 1 1/2 cups All-purpose Flour Use spoon-and-level method.
  • 1 teaspoon Baking Powder
  • 1/2 teaspoon Baking Soda
  • 2 teaspoons Ground Ginger Fresh ginger can be used.
For the Frosting
  • 1 medium Lemon Zested.
  • 8 ounces Cream Cheese Room temperature.

Method
 

Step-by-Step Instructions
  1. Preheat your oven to 350°F (175°C). Gather your tools.
  2. In a large mixing bowl, whisk together the eggs, brown sugar, vegetable oil, honey, and vanilla until smooth.
  3. Gently fold in the grated carrots, zucchini, and optional walnuts.
  4. In a separate bowl, whisk together the flour, baking powder, baking soda, and ground ginger.
  5. Pour the dry ingredients into the wet mixture and stir until just combined.
  6. Spread the batter evenly into your prepared baking pan and bake for approximately 25 minutes.
  7. Remove the pan from the oven and let it cool in the pan on a wire rack for at least 1 hour.
  8. Prepare your frosting by mixing cream cheese, lemon zest, and any additional ingredients until fluffy.
  9. Once cooled, spread the frosting evenly over the bars.
