- Preheat your oven to 350°F (175°C) and grease a 9x5 inch loaf pan.
- Combine 1/3 cup of brown sugar with 1 tablespoon of cinnamon to create cinnamon sugar.
- In a medium bowl, whisk together 2 cups of all-purpose flour, 1/3 cup of brown sugar, 2 teaspoons of baking powder, and 1 teaspoon of salt.
- In a separate bowl, whisk together 1 beaten egg, 1 cup of milk, 1/2 cup of melted butter, 1 teaspoon of vanilla extract, and 1 cup of sourdough discard.
- Fold the wet mixture into the dry ingredients until just moistened, retaining a few lumps.
- Pour half of the batter into the greased loaf pan and sprinkle 3/4 of the cinnamon sugar over it.
- Add the remaining batter on top and sprinkle the rest of the cinnamon sugar mixture.
- Gently swirl the batter with a butter knife to create a marbled effect.
- Bake for 45-50 minutes until golden brown and a toothpick comes out clean.
