- Start by seasoning the beef stew meat generously with salt and pepper. In a large skillet, heat a splash of olive oil over medium-high heat. Once hot, add the beef cubes and sear them for 2-3 minutes on each side until they are beautifully browned. Transfer the seared beef to your slow cooker.
- In the same skillet, melt the unsalted butter over medium heat. Add minced garlic and sauté for about 1 minute until fragrant. Pour in beef broth and Worcestershire sauce, scraping the bottom of the pan to capture all the flavor. Stir in thyme and rosemary, then pour over the beef in the slow cooker.
- Add halved baby potatoes directly into the slow cooker and toss with the beef and garlic butter sauce.
- Place additional pats of unsalted butter on top of the beef and potatoes to enhance richness.
- Cover the slow cooker and set to cook on low for 6-7 hours or on high for 3-4 hours until beef is fork-tender and potatoes are soft.
- Taste and adjust seasoning with additional salt and pepper if needed, then serve immediately garnished with chopped parsley.
