- In a large bowl, combine the beef stew meat with Worcestershire sauce, salt, black pepper, dried Italian seasoning, and smoked paprika. Toss until coated and let marinate for about 10 minutes.
- Halve the baby potatoes and place them in the slow cooker. Drizzle half the melted butter and olive oil over the potatoes, then sprinkle minced garlic on top.
- Layer the seasoned beef cubes on top of the potatoes in the slow cooker. Drizzle the remaining melted butter and olive oil over the beef.
- Cover the slow cooker and set to cook on low for 6-7 hours or high for 3-4 hours until the beef is fork-tender.
- Once cooking is complete, stir the beef and potatoes together and serve hot, garnished with freshly chopped parsley.
