Ingredients
  

For the Shrimp
  • 1 lb Shrimp Thawed if using frozen
  • 1 tbsp Olive Oil Can substitute with avocado or coconut oil
  • 1 tsp Smoked Paprika Regular paprika for milder flavor
  • 1 tsp Garlic Powder Fresh garlic is an alternative
  • 1 tsp Onion Powder Fresh onion for a punchier taste
  • 1 tsp Salt Adjust to taste
  • 1/2 tsp Black Pepper Adjust to taste
  • 1/4 tsp Cayenne Pepper Omit for milder flavor
For the Spicy Mayo
  • 1/2 cup Mayonnaise Can substitute with Greek yogurt
  • 1-2 tbsp Sriracha Adjust based on heat preference
  • 1/2 tbsp Lime Juice Vinegar can be substituted
For Serving
  • 4 cups Rice Choose white, brown, or cauliflower rice
  • 2 cups Vegetables Mix and match (Carrots, Avocado, Cucumber, Green Onions)
  • 1 tbsp Sesame Seeds Optional topping
  • 2 tbsp Soy Sauce or Tamari Use gluten-free if needed

Method
 

Cooking Instructions
  1. Heat 1 tablespoon of olive oil in a skillet over medium-high heat until shimmering, about 2 minutes. Prepare seasoning mix in a bowl.
  2. Cook the shrimp in the hot skillet for 2-3 minutes on each side until they turn pink and opaque.
  3. In a separate bowl, combine 1/2 cup of mayonnaise, 1-2 tablespoons of sriracha, and juice of half a lime. Mix until smooth.
  4. Prepare rice according to package instructions and have it ready by the time the shrimp is cooked.
  5. Layer a portion of rice at the bottom of each bowl, top it with shrimp and chosen vegetables.
  6. Drizzle the spicy mayo over the bowls and optionally sprinkle sesame seeds on top.

Notes
