  • 1/2 cup Flour Use cornstarch for gluten-free.
For the Sauce
  • 2 tbsp Olive Oil Use any neutral oil if preferred.
  • 2 tbsp Butter Increase oil for dairy-free.
  • 8 oz Cremini Mushrooms (sliced) Button mushrooms can be used as a substitute.
  • 1 medium Onion (chopped) Shallots are a lovely alternative.
  • 1 tsp Italian Seasoning Use dried herbs if out.
  • 3 cloves Garlic (minced)
  • 1 tbsp Dijon Mustard Yellow mustard is okay as a swap.
  • 1 cup Dry White Wine Substitute with broth for non-alcoholic.
  • 1 cup Chicken Broth Homemade and store-bought both work.
  • 2 tbsp Fresh Parsley (chopped) Thyme can be used as a substitute.

Method
 

Cooking Steps
  1. Preheat your oven to 375°F (190°C) and position the rack in the middle for even cooking.
  2. Generously season the chicken thighs with salt, pepper, and garlic powder. Lightly dredge in flour.
  3. Heat olive oil and butter in a skillet. Sear chicken thighs skin-side down for 6-8 minutes.
  4. Remove the chicken. In the same skillet, sauté mushrooms and onion with Italian seasoning for 6-8 minutes.
  5. Add minced garlic and Dijon mustard to the skillet. Stir for about 30 seconds until fragrant.
  6. Pour in dry white wine and chicken broth, stirring to combine and scraping up browned bits.
  7. Return the chicken to the skillet, skin-side up, and bake for 20 minutes until 165°F internal temperature.
  8. Garnish with freshly chopped parsley before serving.
