Cooking Steps
- Preheat your oven to 375°F (190°C) and position the rack in the middle for even cooking.
- Generously season the chicken thighs with salt, pepper, and garlic powder. Lightly dredge in flour.
- Heat olive oil and butter in a skillet. Sear chicken thighs skin-side down for 6-8 minutes.
- Remove the chicken. In the same skillet, sauté mushrooms and onion with Italian seasoning for 6-8 minutes.
- Add minced garlic and Dijon mustard to the skillet. Stir for about 30 seconds until fragrant.
- Pour in dry white wine and chicken broth, stirring to combine and scraping up browned bits.
- Return the chicken to the skillet, skin-side up, and bake for 20 minutes until 165°F internal temperature.
- Garnish with freshly chopped parsley before serving.
