For the Soup
  • 6 pieces Banana Peppers fresh or pickled
  • 1 medium Green Pepper
  • 1 lb Italian Sausage sweet or spicy
  • 4 cups Chicken Broth low-sodium if preferred
  • 1 cup Evaporated Milk can substitute with coconut milk
  • 1 cup Parmesan Cheese freshly shredded
  • 4 oz Cream Cheese cubed
  • 1 medium Onion yellow preferred
  • 3 cloves Garlic minced
  • 1 cup Orzo cooked separately
  • 1 tbsp Herbs (basil, oregano, thyme) fresh preferred
  • to taste Salt & Pepper

Method
 

Steps
  1. Prepare the vegetables by cutting the tops off the banana peppers and green pepper, removing the seeds, dicing the green pepper, chopping the onion, and mincing the garlic.
  2. In a large stockpot, heat olive oil over medium heat. Add Italian sausage and cook until browned, about 5-7 minutes.
  3. Using the same pot, melt butter and sauté onion, banana peppers, green pepper, and garlic for about 5 minutes.
  4. Return the cooked sausage to the pot, add chicken broth and evaporated milk, and bring to a gentle boil.
  5. Reduce heat to low, stir in Parmesan and cream cheese until melted. Season with salt, pepper, and herbs; cover and simmer for 25 minutes.
  6. Add uncooked orzo, stir, and cook for another 10 minutes or until tender.
  7. Serve hot, garnished with reserved pepper slices or fresh herbs.
