  • 1/2 cup Korean BBQ Sauce Use teriyaki or hoisin sauce as alternatives.
For the Vegetables
  • 1 cup Sliced Bell Peppers Any variety can be used.
  • 1 medium Zucchini Can substitute with summer squash.
  • 1 cup Carrots Can use baby carrots for convenience.
  • 2 tbsp Olive Oil Can substitute with avocado oil.

Method
 

Step-by-Step Instructions
  1. Preheat your oven to 400°F (200°C) and line baking sheets with parchment paper.
  2. In a large bowl, combine ground beef, panko breadcrumbs, minced garlic, chopped green onions, salt, pepper, and half of the Korean BBQ sauce. Mix gently.
  3. Form the mixture into one-inch meatballs and place them on the prepared baking sheet.
  4. Toss sliced bell peppers, zucchini, and carrots with olive oil, salt, and pepper. Spread on another baking sheet.
  5. Roast meatballs for 20-25 minutes and vegetables for 15-20 minutes until cooked through and tender-crisp.
  6. Drizzle remaining Korean BBQ sauce over meatballs and vegetables during the last five minutes of roasting.
  7. Serve immediately while warm and enjoy!
