- Preheat your oven to 400°F (200°C) and line baking sheets with parchment paper.
- In a large bowl, combine ground beef, panko breadcrumbs, minced garlic, chopped green onions, salt, pepper, and half of the Korean BBQ sauce. Mix gently.
- Form the mixture into one-inch meatballs and place them on the prepared baking sheet.
- Toss sliced bell peppers, zucchini, and carrots with olive oil, salt, and pepper. Spread on another baking sheet.
- Roast meatballs for 20-25 minutes and vegetables for 15-20 minutes until cooked through and tender-crisp.
- Drizzle remaining Korean BBQ sauce over meatballs and vegetables during the last five minutes of roasting.
- Serve immediately while warm and enjoy!
