- Preheat your oven to 375°F (190°C). Gather your ingredients.
- Brown the ground beef in a large skillet over medium heat for 5-7 minutes.
- Add diced onion and sauté for 3-4 minutes. Stir in garlic and spices, cooking for 2 more minutes.
- Incorporate canned diced tomatoes and simmer for about 10 minutes.
- Remove half of the shredded cheese and stir it into the beef mixture.
- Fill each tortilla with the beef mixture and roll them up, placing seam-side down in a greased baking dish.
- Layer the remaining beef mixture on top of the enchiladas and sprinkle with remaining shredded cheese.
- Cover with aluminum foil and bake for 20 minutes, then uncover and bake for an additional 5 minutes.
- Let cool for 5 minutes before serving topped with sour cream and cilantro.
