Method
 

Step-by-Step Instructions
  1. Preheat your oven to 375°F (190°C). Gather your ingredients.
  2. Brown the ground beef in a large skillet over medium heat for 5-7 minutes.
  3. Add diced onion and sauté for 3-4 minutes. Stir in garlic and spices, cooking for 2 more minutes.
  4. Incorporate canned diced tomatoes and simmer for about 10 minutes.
  5. Remove half of the shredded cheese and stir it into the beef mixture.
  6. Fill each tortilla with the beef mixture and roll them up, placing seam-side down in a greased baking dish.
  7. Layer the remaining beef mixture on top of the enchiladas and sprinkle with remaining shredded cheese.
  8. Cover with aluminum foil and bake for 20 minutes, then uncover and bake for an additional 5 minutes.
  9. Let cool for 5 minutes before serving topped with sour cream and cilantro.
