  • 2 pounds Goat Meat Choose bone-in pieces
  • 2 medium Potatoes Cubed
  • 2 tablespoons Curry Powder Toast in oil
  • 1 large Onion Chopped
  • 4 cloves Garlic Minced
  • 1 tablespoon Ginger Finely grated
  • 1 unit Scotch Bonnet Pepper Adjust heat to taste
  • 2 sprigs Fresh Thyme Fresh preferred
  • 2 leaves Bay Leaves Remove before serving
  • 4 cups Stock or Water Chicken or vegetable stock recommended
Optional for Serving
  • 2 cups Rice and Peas Classic accompaniment
  • 2 cups Fried Plantains Add sweetness

Step-by-Step Instructions
  1. Chop the goat meat into bite-sized pieces. Peel and cube the potatoes, and finely chop the onions, garlic, and ginger.
  2. In a large pot, heat oil over medium heat. Add the curry powder, stirring constantly for 30 seconds.
  3. Add the goat meat to the pot and sear for 5-7 minutes until browned.
  4. Stir in the chopped onions, garlic, ginger, and scotch bonnet pepper. Cook for 3-4 minutes.
  5. Add the cubed potatoes, thyme, bay leaves, and enough stock to cover everything. Bring to a boil, then reduce heat and simmer.
  6. After 2.5 to 3 hours, check if the goat meat is tender. Adjust seasoning with salt to taste.
