- Heat 2 tablespoons of olive oil in a large cast iron skillet over medium-high heat for 1-2 minutes until hot.
- Add 1 pound of ground turkey, break it apart, and sauté for 6-8 minutes until browned and no longer pink.
- Stir in 1 packet of taco seasoning, salt, and pepper. Then add 1 can of diced tomatoes, 1 can of black beans, and 1 cup of sweet corn. Simmer for 5-7 minutes.
- Lower heat to medium-low, sprinkle 1 cup of shredded cheese on top, cover, and let melt for 2-3 minutes.
- Remove from heat and garnish with cilantro, jalapeños, and sour cream or Greek yogurt. Serve immediately.
