  • 2 tbsp olive oil for sautéing
  • 1 packet taco seasoning ensure gluten-free if needed
  • 1 can black beans rinsed and drained
  • 1 cup sweet corn can use frozen corn
  • 1 can diced tomatoes undrained
  • 1 cup shredded cheese preferably freshly shredded
For Garnishing
  • 1/4 cup cilantro optional
  • 1 jalapeno sliced
  • 1/2 cup sour cream or Greek yogurt
  • salt to taste
  • pepper to taste

Method
 

Step-by-Step Instructions
  1. Heat 2 tablespoons of olive oil in a large cast iron skillet over medium-high heat for 1-2 minutes until hot.
  2. Add 1 pound of ground turkey, break it apart, and sauté for 6-8 minutes until browned and no longer pink.
  3. Stir in 1 packet of taco seasoning, salt, and pepper. Then add 1 can of diced tomatoes, 1 can of black beans, and 1 cup of sweet corn. Simmer for 5-7 minutes.
  4. Lower heat to medium-low, sprinkle 1 cup of shredded cheese on top, cover, and let melt for 2-3 minutes.
  5. Remove from heat and garnish with cilantro, jalapeños, and sour cream or Greek yogurt. Serve immediately.
