Ingredients

For the Bowl
  • 1 lb Ground Beef Aim for 93% lean for best flavor
  • 2 medium Sweet Potatoes Diced
  • 1 cup Cottage Cheese Substitute with dairy-free yogurt for plant-based version
  • 1 medium Avocado Can use guacamole as an alternative
For the Drizzle
  • 3 tbsp Hot Honey Can be homemade by mixing honey with chili flakes
For Seasoning
  • 1 tbsp Taco Seasoning Adjust spices to taste

Equipment

  • Baking Sheet
  • skillet
  • Parchment Paper

Method

Step-by-Step Instructions
  1. Begin by dicing two medium sweet potatoes into bite-sized pieces for your Ground Beef Hot Honey Bowl. Arrange the diced sweet potatoes on a baking sheet lined with parchment paper. While you’re at it, prepare your toppings by slicing avocado and measuring out cottage cheese and hot honey.
  2. Preheat your oven to 425°F (220°C). Roast the prepared sweet potatoes on the baking sheet for about 25 minutes, or until they are golden brown and fork-tender.
  3. While the sweet potatoes are roasting, heat a large skillet over medium-high heat. Add one pound of the ground beef to the skillet, cooking until browned and no longer pink, about 7-10 minutes.
  4. Once the sweet potatoes are done, layer the roasted sweet potatoes in the bottom of a bowl, followed by the cooked ground beef, a generous dollop of cottage cheese, and sliced avocado.
  5. Drizzle hot honey generously over the top, adjusting amount based on your spice tolerance.
  6. Garnish your assembled bowl as desired and serve immediately.
