Method
 

Step‑by‑Step Instructions
  1. Preheat your oven to 375°F (190°C). Grease a 9x5-inch baking dish with nonstick spray or olive oil.
  2. In a medium skillet, heat a splash of olive oil over medium heat. Add diced onions and sauté for 5 minutes until soft and translucent.
  3. In a large mixing bowl, combine ground chicken, sautéed onions, minced garlic, breadcrumbs, eggs, soy sauce, salt, pepper, and half of the grated Parmesan cheese. Mix gently until just combined.
  4. Transfer the mixture to the greased baking dish and shape it into a loaf form, smoothing the top.
  5. Sprinkle the remaining grated Parmesan cheese evenly over the top of the formed meatloaf.
  6. Bake in the preheated oven for 45-50 minutes until the internal temperature reaches 165°F (74°C).
  7. Remove from the oven and let the meatloaf rest for at least 10 minutes before slicing.
