- Preheat your oven to 375°F (190°C). Grease a 9x5-inch baking dish with nonstick spray or olive oil.
- In a medium skillet, heat a splash of olive oil over medium heat. Add diced onions and sauté for 5 minutes until soft and translucent.
- In a large mixing bowl, combine ground chicken, sautéed onions, minced garlic, breadcrumbs, eggs, soy sauce, salt, pepper, and half of the grated Parmesan cheese. Mix gently until just combined.
- Transfer the mixture to the greased baking dish and shape it into a loaf form, smoothing the top.
- Sprinkle the remaining grated Parmesan cheese evenly over the top of the formed meatloaf.
- Bake in the preheated oven for 45-50 minutes until the internal temperature reaches 165°F (74°C).
- Remove from the oven and let the meatloaf rest for at least 10 minutes before slicing.
