- Preheat your oven to 375°F and gather all your ingredients.
- In your Dutch oven, heat 2 tablespoons of olive oil over medium heat. Add 1/2 cup of diced yellow onion and sauté for 4-5 minutes until translucent.
- Add 1 pound of ground beef to the pot and cook for 6-8 minutes until thoroughly browned. Drain excess fat.
- Stir in 2 tablespoons of taco seasoning, along with 1/2 teaspoon of salt and 1/4 teaspoon of black pepper, then mix well.
- Combine 20 ounces of red enchilada sauce with 10 ounces of tomato soup in a separate bowl until smooth.
- Pour 1/2 cup of the enchilada sauce mixture into the bottom of the Dutch oven. Layer tortillas, followed by 1/3 of the beef mixture and 1/2 cup of sauce, topped with 2/3 cup of cheese.
- Repeat layering with more tortillas, remaining beef mixture, 1/2 cup of sauce, and cheese until all ingredients are used.
- Cover your Dutch oven and bake for 25-30 minutes until the cheese is golden and bubbling.
- Remove the lid and bake for an additional 5-10 minutes for a golden top. Let sit briefly before serving.
- Serve warm, topping with sour cream, cilantro, tomatoes, or jalapeños.
