Ingredients

For the Sauce
  • 1 cup White Sugar adds necessary sweetness to balance the savory soy sauce.
  • 1 cup Brown Sugar enhances depth of flavor and richness; maple syrup can be used as a substitute.
  • 1 cup Soy Sauce essential for umami flavor and saltiness; tamari can be a gluten-free alternative.
  • 1/4 cup Cider Vinegar provides acidity to balance sweetness; rice vinegar makes a great substitute.
  • 2 cloves Garlic, minced delivers aromatic flavor for that true teriyaki essence.
  • 1 tablespoon Ginger Paste adds warmth and spice; freshly grated ginger works wonders, too.
  • 1/2 teaspoon Ground Black Pepper enhances overall flavor; adjust to taste for preference.
For the Beef
  • 2 pounds Beef Stew Meat the heart of the dish; swap with boneless chicken thighs for a lighter version.
For Thickening
  • 2 tablespoons Cornstarch used to thicken the sauce for a glossy finish; arrowroot powder can also work.
  • 3 tablespoons Water aids in creating a slurry for thickening; no substitute necessary.
For Garnish
  • Green Onion add a fresh touch and delightful texture; optional but highly recommended!
  • Sesame Seeds add a fresh touch and delightful texture; optional but highly recommended!

Equipment

  • 6-quart slow cooker

Method

Step-by-Step Instructions
  1. In a medium mixing bowl, combine white sugar, brown sugar, soy sauce, cider vinegar, minced garlic, ginger paste, and ground black pepper. Whisk the mixture until the sugars dissolve completely, and the sauce has a smooth consistency.
  2. Take approximately 2 pounds of beef stew meat and place it directly into the bottom of your 6-quart slow cooker. Spread the beef pieces out evenly.
  3. Carefully pour the prepared teriyaki sauce over the beef in the slow cooker, ensuring every piece is coated as best as possible. Close the lid tightly.
  4. Set your slow cooker to low and let it cook for about 6 hours.
  5. About 30 minutes before serving, mix together 2 tablespoons of cornstarch with 3 tablespoons of water in a small bowl to create a slurry. Stir until smooth and gently stir into the slow cooker.
  6. Once the sauce has thickened, serve your Crock Pot Beef Teriyaki over a bed of steamed rice or noodles. Garnish with chopped green onions and sesame seeds.
