Method
 

Step-by-Step Instructions
  1. Preheat your oven to 350°F (175°C) and grease a 9x13-inch casserole dish with cooking oil or butter.
  2. In a medium skillet, heat 2 tablespoons of cooking oil and sauté the diced onion and bell pepper for 3-5 minutes.
  3. Add the chopped spinach and minced garlic; cook for an additional minute until the spinach wilts.
  4. In a large bowl, whisk together 12 large eggs, 2 cups cottage cheese, Dijon mustard, garlic powder, paprika, and salt.
  5. Fold the sautéed vegetables and 1 cup shredded cheddar cheese into the egg mixture; pour into the greased dish and top with remaining cheddar.
  6. Cover with foil and bake for 25 minutes, then remove foil and bake another 20-30 minutes until set.
