  • 1 tablespoon unsalted butter
  • 1 sheet puff pastry store-bought or homemade
For the Filling
  • 3 medium onions thinly sliced, preferably yellow
  • 1 tablespoon sugar can substitute with honey
  • to taste salt
  • to taste black pepper
  • 1 tablespoon balsamic vinegar red wine vinegar can be substituted
  • 1 teaspoon thyme fresh or dry; oregano can be used as an alternative
  • 4 ounces goat cheese crumbled
Optional Toppings
  • to taste honey for drizzling before baking
  • to taste extra thyme for garnish

Method
 

Step-by-Step Instructions
  1. Heat olive oil and butter in a skillet over medium heat. Add onions, sugar, salt, and black pepper. Cook for 15-20 minutes, stirring occasionally, until golden brown. In the last 5 minutes, add balsamic vinegar and thyme.
  2. Preheat oven to 400°F (200°C). Roll out puff pastry to 1/8 inch thick. Cut into 6 rectangles and transfer to a lined baking sheet. Prick center of each rectangle with a fork.
  3. Spoon caramelized onions onto each pastry rectangle, leaving a small border. Crumble goat cheese over the onions. Optionally sprinkle additional thyme on top.
  4. Bake tarts for 15-20 minutes until the pastry is puffed and golden brown. Cool slightly before serving.
