Step-by-Step Instructions
  1. In a mixing bowl, combine the shrimp with olive oil and Cajun seasoning. Let marinate for at least 10 minutes.
  2. Bring a large pot of salted water to a boil and add the fettuccini. Cook for about 8 to 10 minutes until al dente, then drain.
  3. In a skillet over medium heat, melt butter, add mushrooms and shallots, and sauté for 4 to 5 minutes until mushrooms are golden.
  4. Add marinated shrimp to the skillet in a single layer. Cook for 2 to 3 minutes on each side until pink and slightly charred.
  5. Pour in chicken broth and reduce to about ¼ cup over 2 to 3 minutes. Mix sour cream and cornstarch with extra broth, then whisk into reduced broth.
  6. Return cooked shrimp, sautéed veggies, red bell peppers, and capers to the skillet. Stir to combine and heat through for 2 minutes.
  7. Serve the creamy mixture over warm fettuccini for a hearty meal.
