- Preheat your oven to 450°F (232°C) and line a baking sheet with parchment paper.
- Cook the diced bacon in a cast-iron skillet over medium-high heat for 6-8 minutes until crispy. Drain and set aside.
- In a large bowl, whisk together flour, cheddar cheese, parsley, baking powder, black pepper, salt, baking soda, and garlic powder.
- Grate the frozen butter into the dry ingredients and mix quickly to combine.
- Add the buttermilk and gently mix until a soft dough forms, being careful not to overmix.
- Transfer the dough to a floured surface and knead 3-4 times, then roll out to about 1.25 inches thick.
- Cut out biscuits using a 2-inch cutter and place on the prepared baking sheet. Freeze for 15 minutes.
- Bake the biscuits for 14-17 minutes until golden brown.
- Let cool slightly before serving warm, optionally with butter on top.
