Marinade
  • 1/2 cup Soy Sauce or tamari for gluten-free option
  • 3 cloves Garlic minced
  • 1 tablespoon Ginger minced or ground
  • 1/4 cup Red Wine or Mirin or white wine with sugar
  • 2 tablespoons Brown Sugar or coconut sugar
  • 2 tablespoons Rice Vinegar or white vinegar
Chicken Skewers
  • 1 pound Boneless Chicken (breast or thighs) or tofu/veggies for vegetarian
  • 2 tablespoons Cornstarch or arrowroot powder
  • 8 pieces Wooden Skewers soaked in water

Method
 

Preparation
  1. Soak the wooden skewers in water for 10–20 minutes.
  2. In a mixing bowl, combine the soy sauce, water, red wine or mirin, brown sugar, and rice vinegar.
  3. Trim the chicken and cut into 1-2 inch chunks.
  4. Mix minced garlic, ginger, black pepper, and reserved yakitori sauce and add the chicken.
  5. Pour remaining yakitori sauce into a saucepan and bring to a gentle boil.
  6. Thread the marinated chicken onto the soaked skewers.
  7. Grill the chicken for 8-12 minutes, basting with sauce until it reaches an internal temperature of 165°F.
