Preparation
- Soak the wooden skewers in water for 10–20 minutes.
- In a mixing bowl, combine the soy sauce, water, red wine or mirin, brown sugar, and rice vinegar.
- Trim the chicken and cut into 1-2 inch chunks.
- Mix minced garlic, ginger, black pepper, and reserved yakitori sauce and add the chicken.
- Pour remaining yakitori sauce into a saucepan and bring to a gentle boil.
- Thread the marinated chicken onto the soaked skewers.
- Grill the chicken for 8-12 minutes, basting with sauce until it reaches an internal temperature of 165°F.
