Step-by-Step Instructions
  1. Cook bacon in a skillet over medium heat for 8–10 minutes until crispy, then drain on paper towels.
  2. In the same skillet, pour out excess bacon fat, leaving 1 tablespoon. Add sliced onion and cook for 10–15 minutes until golden brown. Pour in stout and simmer for 5 minutes until reduced, then season with salt and pepper.
  3. In a mixing bowl, combine ground beef, Worcestershire sauce, salt, and pepper. Form into four patties slightly larger than buns.
  4. Preheat grill. Cook patties for 3–4 minutes on one side. Flip and add cheddar cheese during the last minute of cooking.
  5. In a bowl, mix sour cream, Dijon mustard, and a pinch of salt until smooth.
  6. Butter the inner sides of brioche buns and toast in the skillet for 2–3 minutes until golden brown.
