Method
 

Directions
  1. In a mixing bowl, whisk together olive oil, lemon juice, minced garlic, dried oregano, paprika, salt, and black pepper. Cut the chicken into cubes and toss in the marinade. Cover and let marinate in the refrigerator for at least 30 minutes.
  2. Soak wooden skewers in water for 20 minutes. Thread marinated chicken onto skewers, leaving space for even cooking. Set aside while preheating the grill.
  3. Preheat grill to medium-high heat (around 400°F). Grill skewers for 8-10 minutes, turning occasionally until golden brown and cooked through. Let rest before serving.
  4. In a blender, combine feta cheese, Greek yogurt, olive oil, lemon zest, lemon juice, garlic, and dill. Blend until smooth. Taste and adjust seasoning.
  5. Arrange grilled skewers on a platter, place feta dip in the center, and surround with vegetables and warm pita bread. Garnish with fresh herbs.
