Method
 

Preparation Steps
  1. Preheat your oven to 400°F (200°C).

  3. Coat the chicken thighs with the marinade mixture and place them in a baking dish.
  4. Bake the chicken for 35-40 minutes until it reaches an internal temperature of 165°F (75°C).
  5. Peel and cut your Yukon Gold potatoes into chunks, and boil them in salted water for 15-20 minutes until fork-tender.
  6. Drain the potatoes, return them to the pot, and mash them with heavy cream, grated Parmesan, butter, salt, and pepper until creamy.
  7. Let the chicken rest for a few minutes after baking.
