  • 1 tsp Garlic Powder Or fresh minced garlic
  • 1 tsp Italian Seasoning Classic Italian taste
  • 1 tsp Salt Adjust to taste
  • 1 tsp Black Pepper Adjust to taste
  • 1/2 cup Parmesan Cheese For mixing
For the Topping
  • 1 cup Mozzarella Cheese For a melty topping
  • 1/4 cup Parmesan Cheese For sprinkling on top

Method
 

Preparation Steps
  1. Preheat the oven to 375°F (190°C).
  2. In a large skillet, heat olive oil and sauté bell peppers and spinach for 5-7 minutes.
  3. In a mixing bowl, combine ricotta cheese, egg, garlic powder, Italian seasoning, salt, pepper, and half of the parmesan cheese.
  4. In a baking dish, layer the ricotta mixture, zucchini noodles, sautéed veggies, and mozzarella cheese. Repeat layers, ending with mozzarella and parmesan.
  5. Cover with foil and bake for 25 minutes, then uncover and bake for an additional 10-15 minutes.
  6. Let the lasagna rest for 10 minutes before slicing.
