  • 2 tablespoons fresh ginger grated
  • 4 cloves garlic minced
  • 3 tablespoons soy sauce or tamari for gluten-free
  • 1 tablespoon dark soy sauce optional
  • 1 cup coconut milk canned
  • 2 tablespoons brown sugar or honey
  • 3 tablespoons fresh lime juice from about 1 lime
  • to taste salt
  • to taste pepper

  • 1 pound chicken dark meat preferred
  • 6 skewers wooden, soaked for 30 minutes

Method
 

Preparation Steps
  1. In a mixing bowl, whisk together freshly grated ginger, minced garlic, soy sauces, coconut milk, brown sugar, lime juice, salt, and pepper until smooth.
  2. Cut chicken into bite-sized pieces and marinate them in the mixture, refrigerate for at least 30 minutes.
  3. After marinating, soak skewers in water for 30 minutes, then thread chicken onto skewers.
  4. Preheat grill to medium-high heat, around 200–230°C (400–450°F).
  5. Place skewers on the grill, cooking for 4-5 minutes on each side until chicken reaches an internal temperature of 74°C (165°F).
  6. Remove skewers from grill, squeeze fresh lime juice over them, and serve with sides of your choice.
