  • 1/2 cup Sliced Black Olives
  • 1 cup Cherry Tomatoes Halved.
  • 1 jar Jarred Roasted Red Peppers Reserve oil for dressing.
  • 1 tsp Salt
  • 1 tsp Pepper
  • 1/4 cup Fresh Basil For garnish.
For the Dressing
  • 1/4 cup Roasted Red Pepper Oil
  • 1/4 cup Extra Virgin Olive Oil
  • 2 tbsp Balsamic Vinegar
  • 2 tbsp Red Wine Vinegar
  • 1/4 cup Parmesan Cheese Grated.

Step-by-Step Instructions
  1. Cook the Tortellini: Boil salted water, cook tortellini until they float, then drain and cool.
  2. Combine Salad Ingredients: In a bowl, mix the cooled tortellini with mini pepperoni, black olives, mozzarella, cherry tomatoes, and roasted red peppers.
  3. Prepare the Dressing: Whisk together roasted red pepper oil, olive oil, balsamic vinegar, red wine vinegar, and parmesan cheese until smooth.
  4. Mix Dressing with Salad: Pour dressing over salad mixture and toss to coat evenly.
  5. Chill the Salad: Cover and refrigerate for at least 1 hour to meld flavors.
  6. Serve and Garnish: Toss and garnish with fresh basil before serving cold.
