  • 8 oz Imitation Crab Can swap for real crab.
  • 2 medium Cucumbers Persian preferred; can use English cucumbers.
  • 1 cup Shredded Carrots Freshly shredded for best flavor.
Dressing Ingredients
  • 1/2 cup Kewpie Mayo Regular mayo can be used.
  • 2 tbsp Lemon Juice Fresh is best.
  • 1 tbsp Sesame Oil Use extra virgin.
  • Salt To taste.
  • Black Pepper To taste.
  • 1 tsp Mustard Optional; dijon can be used.
  • 1 tbsp Sriracha Hot Sauce Optional; for heat.

Method
 

Preparation Steps
  1. If your imitation crab is frozen, defrost it by placing it in the fridge overnight or soaking in warm water for 20-30 minutes.
  2. Wash and slice cucumbers into thin matchsticks and shred the carrots.
  3. In a mixing bowl, combine the Kewpie mayo, lemon juice, and sesame oil, whisking until smooth and creamy.
  4. Once the crab is defrosted, shred it into bite-sized pieces and add it to the bowl with cucumbers and carrots.
  5. Pour the dressing over the mixture and toss gently until evenly coated.
  6. Serve immediately or store in an airtight container in the fridge for up to a day.
